2 large Russet potatoes
1 tablespoon olive oil
1 teaspoon coarse salt
Pinch of black pepper
Instructions
Scrub the potatoes clean under running water. Dry them completely with paper towels.
Pierce each potato several times deeply on all sides using a fork or sharp knife. This allows steam to escape.
Rub the entire surface of each potato with olive oil.
Sprinkle the coarse salt and pepper evenly over the oiled skin. Press the seasoning lightly into the oil.
Place the seasoned potatoes directly into the air fryer basket, ensuring they are not touching each other if possible.
Set the air fryer temperature to 400°F (200°C).
Air fry for 35 to 45 minutes. Check for doneness at 35 minutes by squeezing gently; the potato should yield easily. If not done, continue cooking in 5-minute increments.
Remove the potatoes from the air fryer. Slice them open lengthwise and fluff the interior flesh with a fork. Serve immediately with your favorite toppings.
Notes
For extra crispy skin, you can lightly rub the potatoes with a small amount of baking powder mixed with the salt before oiling.
If you prefer a softer skin, reduce the cooking time by 5 to 10 minutes.
Russet potatoes work best for achieving the classic fluffy interior texture.
