Ingredients
Scale
2 lbs chicken wings (flats and drumettes)
1 tablespoon baking powder (aluminum-free)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1 cup your favorite BBQ sauce
Instructions
Pat the chicken wings completely dry using paper towels. This step is key for crispiness.
In a large bowl, toss the dry wings with baking powder, salt, pepper, garlic powder, and paprika until evenly coated.
Preheat your air fryer to 380°F (195°C).
Arrange the seasoned wings in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
Air fry for 20 minutes.
After 20 minutes, increase the temperature to 400°F (200°C) and cook for another 5 to 10 minutes, until the internal temperature reaches 165°F (74°C) and the skin is very crisp.
Remove the wings from the air fryer.
In a clean bowl, toss the hot, crispy wings thoroughly with the BBQ sauce until they are fully coated.
Serve immediately.
Notes
Using baking powder helps raise the pH level of the skin, which leads to better browning and crisping. Do not use baking soda.
For extra smoky flavor, add 1/4 teaspoon of liquid smoke to your dry rub seasoning before tossing the wings.
If you prefer thicker sauce coverage, you can toss the sauced wings back into the air fryer for 1 to 2 minutes at 400°F (200°C) after saucing, watching closely to prevent burning.
Serve these wings with celery sticks and blue cheese or ranch dressing.
