Make crispy, sweet coconut chicken bites in your air fryer. This recipe delivers a crunchy coating without deep frying.

  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup sweetened shredded coconut
  • 1/2 cup panko breadcrumbs
  • Cooking spray (oil-based)

Instructions

  1. Place the flour, salt, and pepper in one shallow dish.
  2. In a second shallow dish, place the beaten eggs.
  3. In a third shallow dish, combine the shredded coconut and panko breadcrumbs.
  4. Take each piece of chicken and dredge it first in the flour mixture, shaking off the excess.
  5. Dip the floured chicken into the egg mixture, allowing excess to drip off.
  6. Press the chicken firmly into the coconut-panko mixture to coat all sides completely.
  7. Lightly spray the coated chicken bites with cooking spray on all sides.
  8. Preheat your air fryer to 380°F (195°C).
  9. Place the chicken bites in a single layer in the air fryer basket, working in batches if necessary. Do not overcrowd the basket.
  10. Air fry for 10 to 12 minutes, flipping halfway through, until the chicken is cooked through and the coating is golden brown and crisp.
  11. Serve immediately.

Notes

  • For best coating adhesion, chill the breaded chicken for 15 minutes before air frying.
  • Use chicken tenders instead of breast pieces for a slightly different shape.
  • Serve with a side of sweet chili sauce for dipping.
