2 (4 oz) white fish fillets (cod, tilapia, or pollock)
1 large egg
1 tablespoon water
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon garlic powder
1 cup Panko breadcrumbs
Cooking spray (oil-based)
4 hamburger buns
4 leaves lettuce
4 slices tomato
8 pickle slices
For Tartar Sauce: 1/2 cup mayonnaise
2 tablespoons sweet pickle relish
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1/4 teaspoon black pepper
Instructions
Prepare the tartar sauce: In a small bowl, mix the mayonnaise, relish, Dijon mustard, lemon juice, and pepper. Cover and refrigerate while you prepare the fish.
Set up your breading station. In one shallow dish, whisk the egg and water. In a second dish, combine the flour, salt, pepper, paprika, and garlic powder. In a third dish, place the Panko breadcrumbs.
Pat the fish fillets very dry with paper towels. This step helps achieve crispiness.
Dredge each fillet first in the flour mixture, shaking off excess. Dip into the egg wash, letting excess drip off. Press firmly into the Panko breadcrumbs to coat completely.
Preheat your air fryer to 400°F (200°C) for 5 minutes.
Lightly spray the air fryer basket with cooking spray. Place the breaded fillets in a single layer in the basket, ensuring they do not touch. Spray the tops of the fish generously with cooking spray.
Air fry for 10 to 12 minutes, flipping the fish halfway through the cooking time. Spray the second side lightly with cooking spray before flipping. The fish is done when the coating is golden brown and crispy, and the internal temperature reaches 145°F (63°C).
While the fish cooks, lightly toast the hamburger buns if desired.
Assemble the sandwiches: Place lettuce, a tomato slice, and the crispy fish fillet on the bottom half of each bun. Top the fish with two pickle slices and a generous spoonful of the prepared tartar sauce. Place the top bun on the sandwich.
Notes
For extra crispiness, you can spray the breaded fish again just before placing it in the air fryer.
Use Panko breadcrumbs; they provide a lighter, crunchier texture than standard breadcrumbs.
If you prefer a different fish, ensure the fillets are of similar thickness for even cooking.
