Follow these steps to make extremely crispy potato cubes in your air fryer, seasoned heavily with garlic and Parmesan cheese.

  • 1.5 lbs Russet potatoes, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the potato cubes thoroughly under cold water until the water runs clear. This removes excess starch, which helps with crispiness.
  2. Soak the rinsed potatoes in a bowl of cold water for at least 30 minutes. Drain completely and pat them very dry with paper towels. Moisture is the enemy of crispiness.
  3. In a medium bowl, toss the dry potato cubes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  4. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  5. Place the seasoned potatoes in the air fryer basket in a single layer, working in batches if necessary. Do not overcrowd the basket.
  6. Air fry for 15 minutes. Shake the basket well.
  7. Continue to air fry for another 5 to 10 minutes, shaking every 5 minutes, until the potatoes are golden brown and crispy on the outside. Total cook time is usually 20 to 25 minutes.
  8. Remove the potatoes from the air fryer. Immediately transfer them to a clean bowl.
  9. Sprinkle the grated Parmesan cheese over the hot potatoes and toss quickly to coat. The residual heat will melt the cheese slightly.
  10. Garnish with fresh parsley before serving.

Notes

  • For extra crispiness, you can lightly spray the potatoes with cooking spray halfway through the cooking time.
  • If you prefer a stronger garlic flavor, mix 1 teaspoon of garlic powder with 1 teaspoon of melted butter and toss with the potatoes right before adding the Parmesan.
  • Ensure your potatoes are completely dry after soaking for the best texture.
