3 medium zucchini
1 large egg
2 tablespoons milk
1/2 cup all-purpose flour
1/2 cup Panko breadcrumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon salt

Instructions
Wash the zucchini and trim the ends. Cut each zucchini lengthwise into 4 spears. Pat the spears completely dry with paper towels.
Set up a dredging station with three shallow dishes. In the first dish, whisk the egg and milk together.
In the second dish, place the flour.
In the third dish, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. Mix well.
Working with a few spears at a time, dredge each spear first in the flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the spear firmly into the Parmesan-breadcrumb mixture to coat thoroughly.
Lightly spray the air fryer basket with cooking spray. Arrange the coated zucchini spears in a single layer in the basket, ensuring they do not overlap. You may need to work in batches.
Spray the tops of the coated spears lightly with cooking spray.
Air fry at 380°F (195°C) for 10 to 12 minutes, flipping the spears halfway through the cooking time. The spears are done when the coating is golden brown and crispy.
