4 ears fresh corn, husks removed
2 tablespoons all-purpose flour
1 large egg, lightly beaten
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons unsalted butter, melted
1 teaspoon minced fresh garlic
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Prepare the corn: Stand an ear of corn upright on a cutting board. Carefully slice the cob lengthwise into four equal quarters, creating ‘ribs’. Repeat for all ears.
Set up a dredging station: Place flour in a shallow dish. In a second dish, whisk the egg. In a third dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
Coat the corn ribs: Lightly dredge each corn rib in the flour, shaking off excess. Dip into the egg wash, allowing excess to drip off. Finally, press firmly into the panko mixture until fully coated.
Preheat the air fryer to 380°F (195°C). Lightly spray the air fryer basket with cooking spray.
Arrange the coated corn ribs in a single layer in the air fryer basket. Work in batches if necessary to avoid overcrowding.
Air fry for 10 to 12 minutes, flipping the ribs halfway through the cooking time, until golden brown and crispy.
While the corn cooks, prepare the garlic butter: Melt the butter in a small bowl and stir in the minced fresh garlic.
Once cooked, immediately transfer the hot corn ribs to a serving bowl. Drizzle evenly with the melted garlic butter and toss gently to coat.
Garnish with fresh chopped parsley before serving hot.
Notes
For extra crispiness, you can lightly spray the coated ribs with cooking spray just before placing them in the air fryer.
If you prefer a stronger garlic flavor, add 1/2 teaspoon of garlic powder to the melted butter mixture.
Use fresh corn for the best texture; frozen or canned corn will not work for this preparation.
