Make crispy, flavorful Parmesan-crusted pork schnitzel using your air fryer for a lower-oil result.

  • 4 thin pork cutlets (about 4 oz each)
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Cooking spray (olive oil or avocado oil based)

Instructions

  1. Pound the pork cutlets between two sheets of plastic wrap until they are about 1/4 inch thick. Season both sides lightly with salt and pepper.
  2. Set up a standard breading station with three shallow dishes. In the first dish, combine the flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  3. In the second dish, place the beaten eggs.
  4. In the third dish, mix the panko breadcrumbs, grated Parmesan cheese, garlic powder, and paprika.
  5. Dredge each cutlet first in the flour mixture, shaking off excess. Dip it completely into the egg mixture, letting excess drip off. Finally, press the cutlet firmly into the panko-Parmesan mixture to coat both sides thoroughly.
  6. Preheat your air fryer to 380°F (195°C) for 5 minutes.
  7. Lightly spray the bottom of the air fryer basket with cooking spray. Place the breaded cutlets in a single layer in the basket, ensuring they do not overlap. You may need to work in batches.
  8. Spray the tops of the cutlets generously with cooking spray.
  9. Air fry for 8 to 10 minutes, flipping the cutlets halfway through the cooking time. Spray the second side lightly with cooking spray after flipping.
  10. The schnitzel is done when the internal temperature reaches 145°F (63°C) and the crust is golden brown and crisp.
  11. Serve immediately with lemon wedges.

Notes

  • For extra crispiness, chill the breaded cutlets in the refrigerator for 15 minutes before air frying.
  • If you need a gluten-free option, substitute the all-purpose flour with gluten-free flour and use gluten-free breadcrumbs.
  • Serve with a side of simple green salad or mashed potatoes.
