4 large Russet potatoes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded sharp cheddar cheese
8 slices cooked, crumbled bacon
1/2 cup sour cream
2 tablespoons chopped fresh chives
Instructions
Scrub the potatoes clean and pierce each one several times with a fork.
Bake the potatoes in a conventional oven at 400°F (200°C) for 50 to 60 minutes until tender when squeezed. Let them cool until you can handle them.
Slice each potato in half lengthwise. Scoop out the inside flesh, leaving about a 1/4-inch thick shell. Reserve the scooped potato for another use.
Brush the outside and inside of the potato shells lightly with olive oil. Sprinkle the shells evenly with salt and pepper.
Preheat your air fryer to 380°F (195°C).
Place the potato skins in the air fryer basket in a single layer, ensuring they do not overlap.
Air fry for 8 to 10 minutes, flip them carefully, and air fry for another 5 to 7 minutes until the edges are golden brown and crisp.
Remove the skins from the air fryer. Fill each skin generously with shredded cheddar cheese and crumbled bacon.
Return the filled skins to the air fryer and cook for 2 to 3 minutes, just until the cheese melts.
Top the melted cheese and bacon with a dollop of sour cream and a sprinkle of fresh chives before serving.
Notes
Russet potatoes work best because they have thick skins and fluffy interiors.
For extra crispiness, lightly spray the inside of the shells with cooking spray before the second air fry session.
Do not overcrowd the air fryer basket; work in batches if necessary to maintain crispness.
