1 lb ground turkey
1 tablespoon olive oil
1 packet (1 oz) low-sodium taco seasoning
1/2 cup water
4 cups shredded iceberg lettuce
1 cup cooked white rice
1/2 cup shredded cheddar cheese
1/2 cup salsa
1/4 cup sour cream or plain Greek yogurt
Optional: Sliced avocado, chopped cilantro
Instructions
In a bowl, toss the ground turkey with olive oil and taco seasoning until evenly coated.
Preheat your air fryer to 375°F (190°C).
Place the seasoned turkey in the air fryer basket in a single layer if possible; work in batches if necessary.
Air fry the turkey for 8 to 10 minutes, shaking the basket halfway through, until cooked through and slightly browned.
Drain any excess grease from the cooked turkey.
Stir the 1/2 cup of water into the cooked turkey and seasoning mixture. Cook for 1 more minute in the air fryer to let the sauce thicken slightly.
To assemble the bowls, divide the cooked rice between two bowls.
Top the rice with shredded lettuce.
Spoon half of the crispy turkey mixture over the lettuce in each bowl.
Add toppings: sprinkle with cheese, add a dollop of salsa, and a dollop of sour cream or yogurt.
Add avocado and cilantro if you are using them. Serve immediately.
Notes
For extra crispy turkey, cook the turkey without the water first, drain the fat, and then add the seasoning and water for the last minute of cooking.
You can substitute ground chicken for ground turkey.
If you want crispy tortilla strips, toss small strips of corn tortillas with a light spray of oil and air fry at 380°F (195°C) for 4-6 minutes until golden.
