2 lbs chicken wings (flats and drumettes)
1 tablespoon olive oil
2 tablespoons Za’atar spice blend
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup tahini
2 tablespoons fresh lemon juice
2 tablespoons cold water
1 clove garlic, minced
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Pat the chicken wings very dry using paper towels. This step helps achieve crispiness.
In a medium bowl, toss the wings with olive oil, Za’atar spice blend, salt, and pepper until evenly coated.
Preheat your air fryer to 380°F (195°C) for 5 minutes.
Arrange the wings in a single layer in the air fryer basket, ensuring they do not overlap. Work in batches if necessary.
Air fry for 18 minutes, flipping the wings halfway through the cooking time.
Increase the temperature to 400°F (200°C) and cook for an additional 3 to 5 minutes, or until the skin is deeply golden brown and very crispy.
While the wings finish cooking, prepare the dip: Whisk together tahini, lemon juice, cold water, and minced garlic in a small bowl until smooth. Add more water, one teaspoon at a time, if the sauce is too thick.
Remove wings from the air fryer and transfer to a serving platter. Garnish with fresh parsley.
Serve immediately with the lemon-tahini dip.
Notes
For extra crispiness, you can lightly dust the seasoned wings with 1 teaspoon of baking powder before air frying.
If you do not have Za’atar, you can substitute with a mix of dried thyme, toasted sesame seeds, and sumac.
This recipe works well for both whole wings, flats, and drumettes.
