- 1 1/2 cups dried chickpeas, soaked overnight and drained (do not cook)
- 1/2 cup fresh parsley, packed
- 1/2 cup fresh cilantro, packed
- 1 small onion, roughly chopped
- 3 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons all-purpose flour (or gluten-free blend)
- For Tahini Drizzle: 1/2 cup tahini paste
- For Tahini Drizzle: 1/4 cup fresh lemon juice
- For Tahini Drizzle: 2-4 tablespoons cold water
- For Tahini Drizzle: 1/4 teaspoon salt
- Place the soaked and drained chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and pepper into a food processor.
- Pulse the mixture until it forms a coarse, crumbly dough. Do not over-process; you want texture, not a smooth paste.
- Transfer the mixture to a bowl and stir in the baking soda and flour until just combined.
- Form the mixture into small balls, about 1 inch in diameter.
- Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius). Lightly spray the air fryer basket with cooking spray to prevent sticking.
- Place the falafel balls in a single layer in the air fryer basket, working in batches if necessary. Do not overcrowd the basket.
- Air fry for 12 to 15 minutes, flipping the balls halfway through the cooking time, until they are golden brown and firm.
- While the falafel cooks, prepare the drizzle: Whisk together the tahini paste, lemon juice, and salt in a small bowl.
- Slowly whisk in the cold water, one tablespoon at a time, until the sauce reaches a smooth, pourable consistency.
- Serve the hot air-fried falafel immediately with the tahini drizzle.
Notes
- For best texture, ensure your chickpeas are fully drained after soaking.
- If you do not have dried chickpeas, you can use one 15-ounce can of chickpeas, rinsed and thoroughly patted dry, but the texture may be softer.
- If the falafel mixture seems too wet to hold its shape, add one more tablespoon of flour.
