  • 1 large egg

Instructions

  1. Grate the potatoes and onion coarsely using a box grater.
  2. Place the grated mixture in a clean kitchen towel or cheesecloth. Twist and squeeze firmly to remove as much liquid as possible. This step is important for crispiness.
  3. Transfer the dried potato and onion mixture to a medium bowl.
  4. Add the egg, flour, salt, and pepper to the bowl. Mix well until just combined. Do not overmix.
  5. Preheat your air fryer to 400°F (200°C).
  6. Lightly spray the air fryer basket with cooking spray.
  7. Form the potato mixture into small, flat patties, about 1/2 inch thick.
  8. Place the latkes in the air fryer basket in a single layer, ensuring they do not touch. You may need to cook in batches.
  9. Lightly spray the tops of the latkes with cooking spray.
  10. Air fry for 10-12 minutes, flipping halfway through. The latkes should be golden brown and crisp.
