Ingredients
Scale
2 lbs chicken wings, separated into flats and drumettes
1 tablespoon baking powder (aluminum-free for best results)
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons lemon pepper seasoning (store-bought or homemade)
1 tablespoon melted butter (optional, for tossing after cooking)
Instructions
Pat the chicken wings completely dry using paper towels. This step is key for crispiness.
In a large bowl, toss the dry wings with the baking powder, salt, and black pepper until lightly coated.
Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 5 minutes.
Arrange the wings in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
Air fry for 20 minutes, flipping the wings halfway through the cooking time.
Increase the air fryer temperature to 400 degrees Fahrenheit (200 degrees Celsius). Cook for an additional 5 to 8 minutes, or until the wings are golden brown and very crispy.
Remove the wings from the air fryer. If using butter, place the hot wings in a clean bowl, drizzle with melted butter, and toss with the lemon pepper seasoning until evenly coated.
Serve immediately.
Notes
For extra crispiness, avoid spraying the wings with oil before cooking; the baking powder helps dry out the skin.
If your wings stick, lightly spray the basket surface with cooking spray before adding the wings, but do this only once before the first batch.
If you prefer a saucier wing, skip the butter toss and toss the cooked wings in a thin glaze of melted butter mixed with extra lemon pepper seasoning after they come out of the air fryer.
