You can make restaurant-style potato wedges right in your air fryer! These wedges achieve that perfect contrast: a golden, crunchy exterior and a wonderfully fluffy interior. This easy recipe uses simple pantry staples to create a healthier alternative to deep-fried versions, ready in minutes.

  • 4 large Russet potatoes, scrubbed clean
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or sweet)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cut the potatoes into even wedges. Try to keep the size consistent for even cooking.
  2. Place the cut wedges in a large bowl and soak them in cold water for at least 15 minutes. This step removes excess starch, which helps them crisp up better.
  3. Drain the water completely and pat the potato wedges very dry using paper towels or a clean kitchen cloth. Moisture is the enemy of crispiness.
  4. In the same bowl, toss the dry wedges with olive oil until lightly coated.
  5. In a small separate bowl, mix together the garlic powder, paprika, onion powder, oregano, salt, and pepper.
  6. Sprinkle the seasoning mix over the oiled wedges and toss well until every wedge is evenly coated.
  7. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  8. Place the seasoned wedges in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary to maintain airflow.
  9. Air fry for 15 to 20 minutes, shaking the basket vigorously halfway through (around the 8-minute mark), until they are golden brown and crispy.
  10. Serve your crispy air fryer potato wedges immediately as a side dish or snack.

  • For extra crispiness, you can lightly dust the seasoned wedges with 1 teaspoon of cornstarch before air frying.
