1 (14.75 ounce) can pink salmon, drained and flaked
1 large egg, lightly beaten
1/2 cup dry breadcrumbs (or gluten-free alternative)
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 teaspoon dried parsley
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Cooking spray (olive oil or avocado oil)
Instructions
In a medium bowl, combine the drained salmon, egg, breadcrumbs, mayonnaise, Dijon mustard, parsley, onion powder, and pepper. Mix gently until just combined; do not overmix.
Form the mixture into 6 equal-sized patties, about 1 inch thick.
Lightly spray the air fryer basket with cooking spray. Arrange the patties in a single layer in the basket, ensuring they do not touch.
Lightly spray the tops of the patties with cooking spray.
Air fry at 380°F (195°C) for 8 minutes.
Flip the patties carefully and spray the second side lightly with cooking spray.
Continue to air fry for another 4 to 6 minutes, or until the patties are golden brown and heated through.
Serve immediately.
Notes
If you prefer a gluten-free version, substitute almond flour or gluten-free breadcrumbs for the standard breadcrumbs.
For extra crispiness, you can lightly dust the formed patties with a thin layer of panko breadcrumbs before spraying with oil.
These patties reheat well in the air fryer for 3 minutes at 350°F (175°C).
