4 medium bell peppers (any color)
1 tablespoon olive oil
1 pound ground turkey
1/2 cup cooked quinoa
1/2 cup tomato sauce
1/4 cup chopped onion
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded mozzarella cheese (optional)
Instructions
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Lightly brush the inside of the peppers with olive oil.
In a skillet over medium heat, cook the ground turkey until browned. Drain any excess fat.
Add the cooked quinoa, tomato sauce, onion, garlic, oregano, salt, and pepper to the skillet with the turkey. Stir well to combine the filling. Cook for 3 minutes until heated through.
Place the pepper halves in the air fryer basket in a single layer, cut-side up.
Spoon the turkey and quinoa mixture evenly into each pepper half.
Air fry at 375°F (190°C) for 15 minutes.
If using cheese, sprinkle the mozzarella over the tops of the peppers. Return to the air fryer and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
Check that the peppers are tender before serving.
Notes
For a vegetarian option, substitute the ground turkey with 1 cup of cooked black beans and 1/2 cup of corn.
If your air fryer basket is small, you may need to cook the peppers in batches.
To ensure the peppers cook evenly, try to keep them from touching each other in the basket.
