3 medium zucchini
1 large egg
1/4 cup all-purpose flour
1/2 cup Panko breadcrumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder

Instructions
Preheat your air fryer to 390°F (200°C).
Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into quarters, then cut those quarters into sticks about 3 to 4 inches long and 1/2 inch thick.
Place the zucchini sticks on paper towels and pat them very dry. This step helps prevent sogginess.
Set up a dredging station with three shallow bowls. In the first bowl, place the flour. In the second bowl, lightly beat the egg. In the third bowl, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
Working in small batches, dredge each zucchini stick first in the flour, shaking off any excess. Then dip it into the egg mixture, allowing excess to drip off. Finally, press the stick firmly into the Parmesan-breadcrumb mixture until fully coated.
Lightly spray the coated zucchini sticks with cooking spray. Do not overcrowd the air fryer basket; work in batches if necessary.
Air fry for 10 to 12 minutes, flipping the fries halfway through the cooking time. Spray lightly with oil again after flipping. The fries are done when they are golden brown and crisp.
Serve immediately with your preferred dipping sauce.
Notes
To keep the fries crispy, do not skip drying the zucchini thoroughly before breading.
For an extra savory flavor, use freshly grated Parmesan cheese.
If you prefer a lower-carb option, you can substitute almond flour for the all-purpose flour.
