Whip up a batch of light, airy, and satisfying almond flour pancakes. This easy, gluten-free recipe delivers a delicious nutty flavor perfect for any morning.

Ingredients

Scale
  • 1 1/2 cups almond flour
  • 2 large eggs
  • 1/2 cup unsweetened almond milk (or dairy-free milk)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon melted coconut oil or butter (plus more for the griddle)
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together the almond flour, baking powder, and salt.
  2. In a separate small bowl, whisk the eggs, almond milk, melted coconut oil or butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few small lumps are fine. This batter creates the light and airy texture you want.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat. You know the pan is ready when a drop of water sizzles immediately.
  5. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 3 to 4 minutes on the first side, until bubbles form on the surface and the edges look set.
  7. Flip carefully and cook for another 2 to 3 minutes until golden brown and cooked through.
  8. Serve immediately with your favorite toppings like fresh berries or a drizzle of sugar-free syrup.

Notes

  • For extra fluffy keto pancakes, let the batter rest for 5 minutes before cooking.
  • If you prefer a slightly sweeter pancake, add 1 tablespoon of a keto-friendly sweetener to the batter.
  • You can easily make this a dairy-free almond pancakes recipe by using coconut oil and almond milk.
