Make delicious apple cider donuts at home. These cake-style donuts are infused with real apple cider and warming spices, perfect for a cozy treat.

  • 3½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup buttermilk
  • Vegetable oil, for frying

Instructions

  1. Boil apple cider in a saucepan over medium-high heat until reduced to ½ cup. This takes about 15-20 minutes. Set aside to cool.
  2. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a large bowl.
  3. Beat softened butter and granulated sugar in a separate bowl until light and fluffy.
  4. Beat in eggs one at a time.
  5. Stir in the cooled reduced apple cider and buttermilk until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Cover the dough and refrigerate for at least 30 minutes, or up to 2 hours. This makes the dough easier to handle.
  8. Heat about 3 inches of vegetable oil in a large heavy-bottomed pot or Dutch oven to 350°F (175°C).
  9. Roll out the chilled dough on a lightly floured surface to ½-inch thickness.
  10. Cut out donuts using a donut cutter or two different-sized round cutters. Reroll scraps as needed.
  11. Carefully drop donuts into the hot oil, 2-3 at a time, making sure not to overcrowd the pot.
  12. Fry for 1-2 minutes per side, until golden brown.
  13. Remove donuts with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  14. Serve warm, plain, or with a cinnamon sugar coating.

Notes

  • For a baked version, preheat your oven to 375°F (190°C). Lightly grease a donut pan. Bake for 10-12 minutes, or until lightly golden and firm to the touch.
  • To make cinnamon sugar coating, whisk together ½ cup granulated sugar and 2 teaspoons ground cinnamon. Toss warm donuts in the mixture.
  • Store leftover donuts in an airtight container at room temperature for up to 2 days.
