Create a juicy pork tenderloin with a rich, tangy apple cider glaze. This recipe brings autumn and winter flavors to your table, perfect for a special weeknight meal.

Ingredients

Scale
  • 1 (about 1 1/2 pound) pork tenderloin
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup apple cider
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Rub the pork tenderloin with olive oil, salt, and pepper.
  3. Sear the pork in an oven-safe skillet over medium-high heat for 2 minutes per side until browned.
  4. Transfer the skillet to the preheated oven. Roast for 15 to 20 minutes, or until the internal temperature reaches 145 degrees F.
  5. While the pork roasts, make the glaze. Combine apple cider, apple vinegar, brown sugar, Dijon mustard, and thyme in a small saucepan.
  6. Bring the mixture to a boil over medium heat, then reduce heat and simmer for 10 to 12 minutes, until the glaze reduces by half and thickens enough to coat the back of a spoon.
  7. Remove the pork from the oven. Let it rest for 5 minutes before slicing.
  8. Brush the warm glaze generously over the sliced pork tenderloin before serving.

Notes

  • The internal temperature for perfectly cooked pork is 145 degrees F followed by a rest period.
  • You can substitute maple syrup for brown sugar if you prefer a different sweetness.
  • This glaze pairs well with roasted root vegetables or mashed sweet potatoes.
