  • 1 teaspoon Dijon mustard

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, mash the avocados until mostly smooth. You can leave a few small lumps for texture.
  3. Add the mashed avocado, chopped celery, minced red onion, lime juice, Greek yogurt (if using), Dijon mustard, salt, and pepper to the bowl with the chicken.
  4. Use a fork or spatula to gently fold all the ingredients together until the chicken is evenly coated with the avocado mixture. Do not overmix.
