2 ripe avocados
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon black pepper
1 large egg, beaten
For the Zingy Dip:
1/2 cup Greek yogurt
2 tablespoons lime juice
1 tablespoon chopped cilantro
1/2 teaspoon sriracha (or to taste)
Pinch of salt
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Cut the avocados in half and remove the pits. Slice each half into wedges about 1/2 inch thick.
In a shallow dish, combine the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
Dip each avocado wedge into the beaten egg, letting any excess drip off.
Dredge the egg-coated wedges in the breadcrumb mixture, pressing gently to coat evenly.
Place the coated avocado fries on the prepared baking sheet in a single layer.
Bake for 12-15 minutes, or until golden brown and crispy, flipping halfway through.
While the fries are baking, prepare the zingy dip. In a small bowl, whisk together the Greek yogurt, lime juice, cilantro, sriracha, and a pinch of salt until well combined.
Serve the hot avocado fries immediately with the zingy dip.
Notes
Choose avocados that are ripe but still firm to the touch.
Adjust the amount of sriracha in the dip to your preferred level of spice.
For extra crispiness, you can bake the fries for a few extra minutes, watching carefully to prevent burning.
