  • 1 large yellow onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (4-pound) whole chicken, cooked and shredded
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 2 (15-ounce) cans great northern beans, rinsed and drained
  • 4 cups chicken broth
  • 1 (4-ounce) can diced green chilies
  • 1 cup sour cream
  • 1/2 cup chopped fresh cilantro, for garnish
  • Shredded Monterey Jack cheese, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell peppers and cook until softened, about 5-7 minutes.
  2. Add the garlic, cumin, chili powder, oregano, and cayenne pepper (if using) and cook for 1 minute more, until fragrant.
  3. Stir in the shredded cooked chicken, cannellini beans, great northern beans, chicken broth, and diced green chilies. Bring to a simmer.
  4. Reduce heat to low, cover, and cook for at least 30 minutes, or up to 1 hour, to allow the flavors to meld.
  5. Stir in the sour cream until well combined.
  6. Serve hot, garnished with fresh cilantro, shredded Monterey Jack cheese, and lime wedges.

Notes

  • You can use rotisserie chicken for a quicker preparation.
  • Adjust the cayenne pepper to your preferred level of heat.
  • For a thicker chili, you can mash some of the beans against the side of the pot before adding the sour cream.
