A simple recipe for a rich and cheesy baked dip featuring shredded chicken and spicy buffalo sauce, perfect for parties.

  • 3 cups cooked, shredded chicken (rotisserie chicken works well)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup blue cheese dressing or ranch dressing
  • 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce (or similar)
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled blue cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish or a similar-sized oven-safe skillet.
  2. In a large bowl, combine the softened cream cheese, sour cream, blue cheese or ranch dressing, and hot sauce. Mix until smooth.
  3. Fold in the shredded chicken and 3/4 cup of the cheddar cheese until everything is evenly coated.
  4. Spread the mixture into the prepared baking dish.
  5. Top the dip evenly with the remaining 1/4 cup of cheddar cheese and the crumbled blue cheese, if using.
  6. Bake for 20 to 25 minutes, or until the dip is heated through and the cheese on top is melted and lightly golden brown.
  7. Let the dip cool for 5 minutes before serving warm with tortilla chips, celery sticks, or carrot sticks.

Notes

  • For a thicker dip, reduce the amount of sour cream slightly.
  • You can prepare the dip mixture up to 24 hours ahead of time; cover and refrigerate, then add 5-10 minutes to the baking time.
  • If the dip seems oily after baking, gently blot the top surface with a paper towel before serving.
