  • 1 pound ground chicken
  • 1/2 cup breadcrumbs (Panko recommended)
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (24 ounce) jar marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, 1/4 cup Parmesan cheese, egg, minced garlic, parsley, oregano, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
  3. Roll the mixture into tablespoon-sized meatballs. Place them on the prepared baking sheet.
  4. Bake for 15-18 minutes, or until the meatballs are cooked through and lightly browned.
  5. Pour the marinara sauce into a small baking dish. Arrange the cooked meatballs in the sauce.
  6. Sprinkle the tops of the meatballs with the remaining 1/4 cup of Parmesan cheese and the mozzarella cheese.
