1 cup cooked, shredded chicken
1/2 cup cream cheese, softened
1/4 cup salsa
1/2 teaspoon chili powder
1/4 teaspoon cumin
Pinch of salt
8 small corn tortillas

Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet.
In a medium bowl, mix the shredded chicken, softened cream cheese, salsa, chili powder, cumin, and salt until well combined.
Warm the corn tortillas slightly in the microwave or a damp paper towel to make them pliable. This prevents cracking.
Spoon about 1 tablespoon of the chicken mixture onto the center of each tortilla.
Roll the tortillas tightly into taquito shapes. Place them seam-side down on the prepared baking sheet.
Lightly spray the tops of the rolled taquitos with cooking spray to help them crisp up.
Bake for 12-15 minutes, or until the taquitos are golden brown and crunchy.
Notes
You can use rotisserie chicken for quick preparation.
For extra crispiness, you can briefly warm the tortillas directly over a low gas flame before filling (use tongs).
Serve immediately with your favorite toppings like sour cream, guacamole, or extra salsa.
