1 pint cherry tomatoes
4-6 ounces feta cheese block
2 tablespoons olive oil
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
8 ounces pasta (like penne or rotini)
2-3 cloves garlic, minced
1/4 cup reserved pasta water
Fresh basil for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
Place the cherry tomatoes in the center of a small baking dish.
Add the block of feta cheese on top of the tomatoes.
Drizzle olive oil over the tomatoes and feta.
Sprinkle with oregano, red pepper flakes (if using), salt, and pepper.
Bake for 30-35 minutes, or until the tomatoes burst and the feta is soft and golden.
While the feta and tomatoes bake, cook your pasta according to package directions. Reserve about 1/4 cup of the pasta water before draining.
Once the feta mixture is done, remove it from the oven. Mash the feta and tomatoes with a fork to create a creamy sauce.
Add the cooked pasta and minced garlic to the baking dish.
Toss everything together until the pasta is well coated with the sauce. Add a splash of the reserved pasta water if needed to reach your desired consistency.
Serve immediately, garnished with fresh basil if desired.
Notes
You can use any small pasta shape you like.
Adjust the red pepper flakes to your spice preference.
