1 3/4 cups milk (dairy or non-dairy)
1/2 cup maple syrup or honey
1 large egg
1 teaspoon vanilla extract
1 cup mixed berries (fresh or frozen)
1/2 cup chopped nuts (walnuts, pecans, or almonds)
Instructions
Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin.
In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the milk, maple syrup or honey, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Gently fold in the mixed berries and chopped nuts.
Divide the mixture evenly among the 12 muffin cups.
Bake for 25-30 minutes, or until the tops are golden brown and the oatmeal cups are set.
Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
