4 large baking potatoes, peeled and cubed
1 tablespoon olive oil
4 slices bacon, chopped
1 medium yellow onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cups chicken broth
2 cups milk (whole milk recommended)
1/2 cup all-purpose flour
1 cup shredded sharp cheddar cheese, plus more for topping
1/2 cup sour cream, plus more for topping
Salt and black pepper to taste
Chives, chopped, for garnish
Instructions
Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, about 15 minutes. Drain and set aside.
While potatoes cook, cook the chopped bacon in the same pot over medium heat until crispy. Remove bacon with a slotted spoon, leaving about 1 tablespoon of bacon grease in the pot.
Add the olive oil to the bacon grease. Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
Whisk the flour into the vegetables and grease mixture to form a roux. Cook for 1 minute, stirring constantly.
Slowly whisk in the chicken broth until smooth. Bring the mixture to a simmer, stirring until it thickens slightly.
Stir in the milk and the cooked potatoes. Simmer gently for 10 minutes, allowing flavors to meld.
Remove the pot from the heat. Using an immersion blender or carefully transferring to a regular blender, blend about half of the soup until smooth. Leave the rest chunky for texture.
Stir in the shredded cheddar cheese until completely melted and the soup is creamy.
Mix in the sour cream. Season generously with salt and pepper to your taste.
Serve the hot soup immediately, topped with reserved crispy bacon, extra cheese, sour cream, and fresh chives.
Notes
For an extra rich flavor, use russet potatoes.
If you prefer a completely smooth soup, blend all the potatoes and liquid together.
You can substitute vegetable broth for chicken broth to easily make this vegetarian.
