Bake chicken breasts until juicy and top them with a creamy, savory spinach and artichoke mixture. This recipe gives you the indulgent flavor of your favorite dip in a satisfying, high-protein dinner.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 cup frozen chopped spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and roughly chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a baking dish.
  2. Season the chicken breasts on both sides with salt and pepper. Place them in the prepared baking dish.
  3. In a medium bowl, combine the softened cream cheese, mayonnaise, 1/2 cup Parmesan cheese, dried spinach, chopped artichoke hearts, minced garlic, and onion powder. Mix well until smooth and fully combined.
  4. Spoon the spinach artichoke mixture evenly over the top of each chicken breast, spreading it to cover.
  5. Sprinkle a little extra Parmesan cheese over the topping.
  6. Bake for 25 to 30 minutes, or until the chicken is cooked through and the topping is bubbly and lightly golden.
  7. Let the chicken rest for 5 minutes before serving.

Notes

  • Squeeze all excess water from the thawed spinach. This prevents the topping from becoming watery.
  • If your cream cheese is too firm, microwave it for 15-20 seconds to make mixing easier.
  • Serve this dish with a side of steamed broccoli or a fresh green salad.
