Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Wash the sweet potatoes thoroughly under running water. Scrub the skins well to remove any dirt. Pat them completely dry with a paper towel.
  3. Pierce each sweet potato 5 to 6 times deeply all over using a sharp fork or a paring knife. This allows steam to escape and prevents the potatoes from bursting.
  4. If you want extra crispy skin, rub the potatoes lightly with olive oil and sprinkle generously with coarse salt. If you prefer a simpler approach, just sprinkle with salt.
  5. Place the prepared sweet potatoes directly onto the middle oven rack. Do not use foil or a baking dish, as this traps steam and prevents the skin from crisping.
  6. Bake for 45 to 60 minutes. The exact time depends on the size of your potatoes. Start checking for doneness around the 45-minute mark.
  7. The sweet potatoes are done when the skin is slightly wrinkled and caramelized, and you can easily pierce the center with a fork with no resistance.
  8. Remove from the oven. Let them cool for about 5 minutes before slicing them open lengthwise down the center. Gently squeeze the ends to fluff up the inside flesh.
