4 medium sweet potatoes, scrubbed clean
1 tablespoon olive oil
1 teaspoon coarse salt
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Prick each sweet potato several times deeply with a fork. This allows steam to escape.
Rub the entire surface of each potato with olive oil.
Sprinkle the potatoes generously with coarse salt. This helps draw out moisture and crisp the skin.
Place the potatoes directly on the middle oven rack. Do not use a baking sheet unless you prefer a softer bottom skin.
Bake for 45 to 60 minutes. Cooking time depends on the size of the potatoes. Start checking for doneness at 45 minutes.
The potato is done when you can easily pierce the center with a fork or knife with no resistance. The skin should look slightly wrinkled and firm.
Remove from the oven. Slice open lengthwise and fluff the interior flesh with a fork before adding your desired toppings.
Notes
For extra crispy skin, place the potatoes directly on the oven rack rather than on foil or a pan.
If you plan to make twice-baked potatoes, slightly undercook them by about 10 minutes, cool, scoop out the flesh, mix with fillings, and bake again for 10-15 minutes.
For meal prep, bake the potatoes ahead of time and store them whole in the refrigerator for up to four days. Reheat in the oven or microwave.
