  • 2 medium zucchinis
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt

  • 2 large eggs
  • 1 tablespoon water
  • For the Ranch Dip:
  • 1 cup Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and trim the ends of the zucchinis. Cut them into 1/2-inch thick sticks.
  3. In a shallow dish, whisk together the eggs and water.
  4. In another shallow dish, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  5. Dip each zucchini stick into the egg mixture, letting any excess drip off.
  6. Then, dredge the zucchini stick in the breadcrumb mixture, pressing gently to coat evenly.
  7. Place the coated zucchini sticks in a single layer on the prepared baking sheet.
  8. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  9. While the fries are baking, prepare the ranch dip. In a small bowl, combine Greek yogurt, dill, chives, garlic powder, onion powder, salt, and pepper. Stir well.
  10. Serve the baked zucchini fries warm with the ranch dip.
