- 1 cup (2 sticks) unsalted butter, melted
- 2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 cup mashed ripe bananas (about 2 medium)
- 1/2 cup chopped nuts (optional)
- 1/2 cup chocolate chips (optional)
- Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a large bowl, whisk together the melted butter and granulated sugar until well combined.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate small bowl, whisk together the baking powder and salt with the flour.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the mashed bananas, and then stir in any optional nuts or chocolate chips.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan before cutting into squares.
Notes
- Ensure your bananas are very ripe for the best flavor and sweetness.
- For a richer flavor, you can use brown sugar instead of granulated sugar.
- Feel free to add other mix-ins like white chocolate chips or toffee bits.
