Easy One-Bowl Banana Protein Muffins

Make these simple, high-protein banana muffins using just one bowl. They are perfect for a quick breakfast or a post-workout snack and freeze well for later.

Ingredients

  • 2 large ripe bananas, mashed
  • 1/2 cup plain Greek yogurt
  • 1/4 cup melted coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup
  • 1 1/2 cups whole wheat flour
  • 1 scoop vanilla protein powder (whey or casein)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Add the Greek yogurt, melted coconut oil, egg, vanilla extract, and maple syrup to the mashed bananas. Whisk everything together until just combined. This is your wet mixture.
  4. In the same bowl (no need to wash!), add the flour, protein powder, baking soda, baking powder, cinnamon, and salt directly on top of the wet ingredients.
  5. Gently fold the dry ingredients into the wet ingredients using a spatula until just combined. Do not overmix; a few streaks of flour are fine.
  6. If using, fold in the chopped nuts.
  7. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  8. Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For easy freezer protein muffins, let them cool completely, then place them in a freezer-safe bag or container. They keep well for up to 3 months. Thaw overnight in the refrigerator or microwave for 30-45 seconds.
  • If you prefer a lower sugar option, reduce the maple syrup to 1/4 cup and add 1/4 cup of unsweetened applesauce.
  • You can use any flavor of protein powder, but vanilla works best for these greek yogurt banana muffins.
