This basil fried rice recipe transforms leftover rice and fresh summer herbs into a fragrant, Thai-inspired stir-fry. It combines fresh basil, garlic, and chilies with rice and vegetables for a quick and flavorful weeknight meal.

  • 3 tablespoons vegetable oil, divided
  • 2 large eggs, lightly beaten
  • 4 cups cooked day-old jasmine rice, chilled
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-2 fresh red chilies, thinly sliced (adjust to taste)
  • 1 cup mixed vegetables (such as diced carrots, peas, corn)
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 cup fresh basil leaves, packed
  • Lime wedges, for serving

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble until cooked through. Remove the eggs from the wok and set aside.
  2. Add the remaining 2 tablespoons of vegetable oil to the wok. Add the chopped onion, minced garlic, and sliced chilies. Stir-fry for 1-2 minutes until fragrant.
  3. Add the mixed vegetables to the wok and stir-fry for 3-4 minutes until tender-crisp.
  4. Add the chilled rice to the wok, breaking up any clumps. Stir-fry for 5-7 minutes, ensuring the rice is heated through and slightly toasted.
  5. In a small bowl, whisk together the fish sauce, soy sauce, and sugar. Pour the sauce mixture over the rice and vegetables. Stir well to combine, ensuring the rice is evenly coated.
  6. Return the cooked scrambled eggs to the wok. Add the fresh basil leaves. Toss gently until the basil wilts, about 1 minute.
  7. Remove from heat and serve immediately with lime wedges on the side.

Notes

  • Using day-old, chilled rice is crucial for fried rice, as it prevents the dish from becoming sticky and clumpy.
  • Adjust the amount of chilies to your preferred spice level.
  • For added protein, you can add cooked chicken, shrimp, or tofu.
