  • 2 lbs Russet Potatoes, cut into fries
  • 1 lb boneless, skinless chicken breast or thighs
  • 1 cup your favorite BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: Ranch dressing, chopped green onions, bacon bits

Instructions

  1. Preheat your oven to 425°F (220°C). Soak the cut fries in cold water for at least 30 minutes; drain and pat them completely dry.
  2. Toss the dried fries with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them in a single layer on a baking sheet.
  3. Bake the fries for 20-25 minutes, flipping halfway, until golden brown and crispy.
  4. While fries bake, cook the chicken. Season the chicken with salt and pepper. Cook in a skillet over medium heat until fully cooked through. Shred the chicken using two forks.
  5. Toss the shredded chicken with the BBQ sauce until well coated.
  6. Remove the fries from the oven. Sprinkle the cheddar and Monterey Jack cheese evenly over the hot fries.
  7. Return the fries to the oven for 3-5 minutes, or until the cheese is fully melted and bubbly.
  8. Remove the loaded fries from the oven. Top generously with the BBQ chicken mixture.
  9. Add your desired optional toppings like a drizzle of ranch dressing and chopped green onions. Serve immediately.
