  • 1 large head of broccoli, cut into florets
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional, for richness)
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch (for the sauce)
  • Vegetable oil, for cooking
  • Cooked rice, for serving

Instructions

  1. In a bowl, combine the sliced beef with 1 tablespoon soy sauce, 1 teaspoon cornstarch, and baking soda. Mix well and let it marinate for 15 minutes. This keeps the beef tender.
  2. Whisk together all the sauce ingredients: beef broth, 2 tablespoons soy sauce, oyster sauce (if using), brown sugar, and 1 teaspoon cornstarch. Set the sauce aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer (work in batches if needed) and cook quickly until browned, about 1-2 minutes per side. Remove the beef and set it aside.
  4. Add a little more oil to the wok if necessary. Add the broccoli florets and stir fry for 3-4 minutes until they turn bright green and are crisp-tender.
  5. Push the broccoli to one side of the wok. Add the minced garlic and grated ginger to the cleared space and cook for about 30 seconds until fragrant.
  6. Return the cooked beef to the wok. Give the prepared sauce a quick whisk (the cornstarch settles) and pour it over the beef and broccoli.
  7. Stir constantly as the sauce boils and thickens, coating everything evenly. This takes about 1 minute.
