1 cup cooked beets, chopped
1 (15-ounce) can chickpeas, rinsed and drained
1/2 cup plain Greek yogurt
2 tablespoons tahini
1 lemon, juiced
1 clove garlic
1/4 cup olive oil, plus more for drizzling
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup shelled pistachios, roughly chopped, for topping
Instructions
Place the chopped beets, chickpeas, Greek yogurt, tahini, lemon juice, garlic, olive oil, salt, and pepper into a food processor.
Process the mixture until it is completely smooth and creamy. You may need to stop and scrape down the sides a few times.
Taste the hummus and adjust salt or lemon juice as needed. If the hummus is too thick, add water one teaspoon at a time until you reach your desired consistency.
Transfer the beet hummus to a serving bowl.
Drizzle the top with a bit of extra olive oil.
Sprinkle the chopped pistachios over the top.
Serve immediately or cover and chill for later.
Notes
For the best flavor, use roasted or boiled beets, not pickled.
If you prefer a tangier hummus, increase the lemon juice by one teaspoon.
