A classic and comforting Creamy Beef and Mushroom Stroganoff recipe featuring tender beef, earthy mushrooms, and a rich, velvety sauce. Perfect for a hearty family dinner.

  • 1.5 lbs beef sirloin or tenderloin, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 large onion, thinly sliced
  • 1 lb cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1.5 cups beef broth
  • 1 cup sour cream
  • 1 tsp Dijon mustard
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large skillet, heat olive oil and butter over medium-high heat.
  2. Add the thinly sliced beef and cook until browned on all sides. Remove beef from skillet and set aside.
  3. Add the sliced onion to the skillet and cook until softened, about 5 minutes.
  4. Add the sliced mushrooms and cook until they release their moisture and begin to brown, about 8-10 minutes.
  5. Stir in the minced garlic and cook for 1 minute until fragrant.
  6. Sprinkle the flour over the mushroom and onion mixture and stir well. Cook for 1 minute.
  7. Gradually whisk in the beef broth until smooth. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened.
  8. Reduce heat to low. Stir in the sour cream and Dijon mustard until well combined and the sauce is creamy. Do not boil after adding sour cream.
  9. Return the browned beef to the skillet and stir to coat with the sauce. Heat through gently.
  10. Season with salt and pepper to taste.
  11. Serve hot, garnished with fresh parsley.
