1 pound ground beef
1 large onion, chopped
1/2 cup dill pickle relish
1/4 cup mayonnaise
2 tablespoons yellow mustard
1 tablespoon white vinegar
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper to taste
8 large flour tortillas
2 cups shredded cheddar cheese
1 cup shredded iceberg lettuce
1/2 cup chopped dill pickles
Instructions
Brown ground beef in a large skillet over medium heat. Drain excess fat.
Add chopped onion to the skillet with the beef and cook until softened, about 5 minutes. Season with salt and pepper.
While beef cooks, prepare the special sauce: In a small bowl, combine pickle relish, mayonnaise, mustard, white vinegar, onion powder, garlic powder, and paprika. Mix well.
To assemble each quesadilla, lay one tortilla flat. Spread a thin layer of special sauce on half of the tortilla.
Sprinkle a quarter cup of shredded cheese over the sauce.
Spoon a quarter of the cooked beef mixture onto the cheese.
Add a sprinkle of shredded lettuce and chopped pickles.
Fold the other half of the tortilla over the filling to create a half-moon shape.
Heat a clean skillet or griddle over medium heat. Cook the quesadilla for 3-4 minutes per side, or until golden brown and the cheese is melted.
Repeat for remaining quesadillas. Serve immediately.
Notes
Adjust the amount of special sauce to your liking.
For extra crunch, toast the tortillas lightly before adding fillings.
You can prepare the special sauce ahead of time and store it in the refrigerator.
