  • 1 1/2 cups All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 1/2 cup Packed Brown Sugar
  • 1/4 teaspoon Salt
  • 1/2 cup (1 stick) Cold Unsalted Butter, cut into cubes
  • 1 cup Blackberry Jam
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the flour, granulated sugar, brown sugar, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Reserve about 1 cup of this mixture for the topping.
  4. Press the remaining crumb mixture evenly into the bottom of the prepared pan to form the base. Bake the crust for 12 minutes.
  5. While the crust bakes, whisk together the egg and vanilla extract in a small bowl. Mix this liquid into the reserved 1 cup of crumb mixture until just combined. This will create a slightly softer topping.
  6. Remove the partially baked crust from the oven. Carefully spread the blackberry jam evenly over the warm base.
  7. Sprinkle the reserved, slightly moistened crumb mixture evenly over the jam layer.
  8. Return the pan to the oven. Bake for 25 to 30 minutes, or until the topping is golden brown and the jam is bubbly.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Once fully cooled, slice into squares for serving.

  • Make sure the butter is very cold when cutting it into the dry ingredients. Cold butter creates a better crumble texture.
