Make a surprisingly creamy and bright ice cream using the richness of olive oil paired with the tart sweetness of fresh blood oranges. This recipe offers a unique, sophisticated twist on homemade frozen desserts.

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup high-quality extra virgin olive oil
  • Zest of 2 blood oranges
  • 1/2 cup fresh blood orange juice (about 3-4 oranges)
  • 1/4 teaspoon fine sea salt
  • 4 large egg yolks

Instructions

  1. In a medium saucepan, combine the heavy cream, milk, sugar, blood orange zest, and salt. Heat over medium heat, stirring until the sugar dissolves and the mixture is steaming, but do not boil. Remove from heat.
  2. In a separate bowl, whisk the egg yolks. Slowly temper the yolks by whisking in about one cup of the hot cream mixture.
  3. Pour the tempered yolk mixture back into the saucepan with the remaining cream.
  4. Return the saucepan to low heat. Stir constantly with a wooden spoon or spatula until the custard thickens enough to coat the back of the spoon (reaching about 175°F). Do not let it boil.
  5. Immediately remove the custard from the heat and strain it through a fine-mesh sieve into a clean bowl set over an ice bath.
  6. Whisk in the blood orange juice and the olive oil until fully combined.
  7. Cover the surface of the custard with plastic wrap, pressing it directly onto the surface. Chill in the refrigerator for at least 4 hours, or preferably overnight, until completely cold.
  8. Churn the chilled custard in your ice cream maker according to the manufacturer’s directions.
  9. Transfer the soft ice cream to an airtight container. Freeze for at least 2-3 hours to firm up before serving.

Notes

  • Use a fruity, mild olive oil for the best flavor. A very peppery oil may overpower the orange.
  • Taste your blood oranges beforehand; if they are very tart, you may want to add an extra tablespoon of sugar to the base.
  • The olive oil keeps this ice cream exceptionally smooth, requiring less churning time.
