- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 3 medium)
- 1/2 cup plain yogurt or sour cream
- 1 cup fresh or frozen blueberries
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream the softened butter and sugar together until light and fluffy.
- Beat in the egg and vanilla extract until just combined.
- Mix in the mashed bananas and yogurt until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Gently fold in the blueberries.
- Pour the batter into the prepared loaf pan.
- Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
- For extra moisture, substitute sour cream for plain yogurt.
- If using frozen blueberries, do not thaw them; toss them with one tablespoon of flour before folding them into the batter to prevent sinking.
- This bread freezes well once completely cooled. Wrap tightly in plastic wrap and foil.
