1 cup fresh blueberries
5-7 fresh basil leaves
1/2 cup freshly squeezed lemon juice
1/4 cup granulated sugar (or to taste)
2 cups cold water
Ice cubes
Fresh blueberries and basil sprigs for garnish (optional)
Instructions
In a small saucepan, combine 1/2 cup of blueberries, sugar, and 1/4 cup of water.
Heat over medium heat, stirring occasionally, until the sugar dissolves and the blueberries begin to break down, about 5-7 minutes.
Remove from heat and let cool slightly.
In a blender, combine the blueberry-sugar mixture, remaining 1/4 cup of blueberries, basil leaves, lemon juice, and the remaining 1 3/4 cups of water.
Blend until smooth.
Strain the mixture through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much liquid as possible. Discard the solids.
Chill the lemonade in the refrigerator for at least 30 minutes.
Serve over ice, garnished with fresh blueberries and basil sprigs if desired.
Notes
For a less sweet mocktail, reduce the amount of sugar.
If you don’t have fresh lemon juice, you can use bottled, but fresh is recommended for the best flavor.
You can add a splash of sparkling water for a fizzy version.
