4 large eggs
1/4 cup milk or water
Salt and pepper to taste
1 teaspoon olive oil
1/2 cup cooked black beans, rinsed and drained
1/2 cup cooked ground turkey or chicken sausage
1/4 cup shredded cheddar cheese
2 large whole wheat tortillas
1/4 cup salsa (optional)
Instructions
Whisk eggs, milk (or water), salt, and pepper together in a bowl.
Heat olive oil in a non-stick skillet over medium heat.
Pour in the egg mixture and cook, stirring gently, until scrambled to your liking.
In the last minute of cooking the eggs, add the black beans and cooked meat to the skillet to warm through.
Sprinkle cheese over the eggs and meat; remove from heat.
Warm the tortillas briefly in a dry pan or microwave until soft.
Spoon the egg and meat mixture onto the center of each tortilla.
Add salsa, if using.
Fold the sides of the tortilla inward, then tightly roll from the bottom up to create a secure burrito.
Wrap tightly in foil or parchment paper for portability.

You can prepare the meat and beans ahead of time for faster assembly.
