Make these easy, healthy breakfast cookies with oats, peanut butter, and banana. They are perfect for a quick, grab-and-go morning meal or meal prep.

  • 2 cups rolled oats
  • 1 cup natural peanut butter
  • 2 ripe bananas, mashed
  • 1/2 cup brown sugar (or low sugar substitute)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed bananas and peanut butter until smooth.
  3. Add the brown sugar, egg, and vanilla extract to the wet ingredients. Mix well.
  4. In a separate bowl, whisk together the rolled oats, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips if you are using them.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie. You can gently flatten them slightly with a fork.
  7. Bake for 12 to 15 minutes, or until the edges are lightly golden brown.
  8. Let the breakfast cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. Store your make ahead breakfast cookies in an airtight container.

Notes

  • For a protein packed cookie, add 1/4 cup of your favorite protein powder to the dry ingredients.
  • If you prefer a low sugar cookie, substitute the brown sugar with a zero-calorie sweetener equivalent to 1/2 cup of sugar.
  • These are great for gluten free breakfast cookies if you use certified gluten free oats.
  • For a different flavor, try adding 1/2 cup of dried fruit instead of chocolate chips.
