1.5 lbs Boneless, skinless chicken thighs
1/4 cup Brown sugar, packed
3 cloves Garlic, minced
2 tablespoons Soy sauce
1 tablespoon Olive oil
1 teaspoon Ginger, grated (optional)
1/4 teaspoon Black pepper
1 tablespoon Cornstarch mixed with 2 tablespoons cold water (for slurry)
Instructions
Pat the chicken thighs dry with paper towels. Season lightly with salt and pepper.
In a small bowl, whisk together the brown sugar, minced garlic, soy sauce, olive oil, and grated ginger, if using.
Heat a large skillet over medium-high heat. Add the chicken thighs and sear for 4-5 minutes per side until golden brown.
Reduce the heat to medium. Pour the prepared sauce mixture over the chicken thighs.
Let the sauce simmer for 5-7 minutes, turning the chicken occasionally to coat evenly. The sauce will begin to thicken.
Stir the cornstarch slurry again and pour it into the simmering sauce. Stir constantly until the sauce thickens into a sticky glaze, about 1 minute.
