Make crispy bacon coated in a sweet and salty brown sugar glaze. This recipe works well for breakfast or as an appetizer.

  • 1 pound thick cut bacon
  • 1/2 cup packed brown sugar
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil and place a wire rack on top of the foil.
  2. In a small bowl, mix the brown sugar, black pepper, and cayenne pepper, if using.
  3. Lay the bacon strips in a single layer on the wire rack. Do not let the strips overlap.
  4. Sprinkle the brown sugar mixture evenly over the top side of the bacon strips. Press the sugar lightly onto the bacon so it adheres.
  5. Bake for 15 minutes.
  6. Remove the pan from the oven. Carefully flip each bacon strip using tongs.
  7. Sprinkle the remaining brown sugar mixture over the second side of the bacon.
  8. Return the pan to the oven and bake for another 10 to 15 minutes, or until the bacon reaches your desired crispness and the glaze is bubbly. Watch closely during the last few minutes to prevent burning.
  9. Remove the bacon from the oven and immediately transfer the strips to a plate lined with paper towels to drain excess grease.
  10. Let the bacon cool for 5 minutes before serving; the glaze will harden slightly as it cools.

Notes

  • For a bourbon flavor, mix 1 tablespoon of bourbon into the brown sugar mixture before sprinkling.
  • If you prefer a thicker glaze, you can brush a thin layer of maple syrup over the bacon before applying the sugar mixture.
  • If you do not have a wire rack, you can place the bacon directly on foil, but you will need to flip it more often to prevent sticking.
